Simple Perfection: Tomato Salad Recipe, with Basil & Buffalo Mozzarella
Easy. Fast. Healthy. Delicious. To make this recipe truly stand out, you need to use fresh, quality ingredients. Local, in season tomatoes will be MUCH better than the relatively flavourless year-round tomatoes in the store. Equally, having fresh basil, quality olive oil, and real, fresh mozzarella from buffaloes (not cows), makes a big difference.
The snow is falling and I'm thinking back to a warmer time.
Last summer, my wife surprised me by whisking us away to NYC for a long weekend! (Yes, it was pretty freaking sweet!) We stayed at a friend's place who was out of town (Thanks Anneka!), and visited with one of my top 2 favourite DJ's, Richniques.
We ate out a bunch, but also made sure to start the day off with something healthy and light so were didn't feel bloated/gross by the end of the trip. That's not sexy.
This was one the of the simple options I came up with.
No cooking, so easy to do on while traveling. Only a few ingredients. And super tasty!
*This will taste way better if you can get local, in season ingredients. WAY BETTER!
