This recipe for stewed kale with bacon, coconut, ginger and lemon is one of my all time favourites. It's a totally original recipe invented by yours truly, loosely influenced by Jamaican-style callaloo.
This delicious greens dish is super easy to make and can be ready to eat in 15mins. Cook up a big batch for leftovers and you'll have a healthy veggie side dish for a few days. It stores well in the fridge and reheats like a dream!
